Zucchini Bread

Ingredients

  • 2 c. zucchini, grated, squeezed, packed tight
  • 3 eggs, beaten
  • 1 c. salad oil
  • 1 c. sugar (granulated)
  • 2 tsp. vanilla
  • 3 1/4 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 3 tsp. cinnamon
  • 1 tsp. salt
  • 1 c. raisins (optional)
  • 1 c. chopped nuts (optional)

Directions

    Mix first 5 ingredients.

    Sift dry ingredients together. Combine into zucchini mix ingredients.

    Blend in raisins and/or nuts.

    (Should yield enough for 2 loaves.)

    Divide mixture into loaf pans.

    Bake at 350° for 1 hour.

    Cool for 10 minutes before removing from pans.

    Wrap in aluminum foil, store in refrigerator. (Also can be cooked in small individual loaf pans.)
