Ingredients

  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 2 c. zucchini
  • 2 tsp. vanilla
  • 3 c. flour
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 2 c. pecans
  • 1 Tbsp. margarine
  • 2 c. flour
  • 2 c. milk (use nonfat dry milk plus 2 c. water if preferred)
  • 1 tsp. salt
  • 4 eggs or 1 egg and 6 whites

Directions

    Melt margarine 1 minute in microwave.

    Add flour, milk, salt and eggs.

    Whisk only until smooth to the consistency of cream. Pour into custard cups (2/3 full) and cook on lower rack (bottom heat is required).

    Do not preheat oven.

    Set oven for 450° for 20 minutes, then 350° for 20 to 25 minutes, or until golden brown. Turn oven off.

    Pierce with sharp knife.

    Let stand 5 minutes in oven to dry interior.
