- 3 eggs
- 1 c. oil
- 2 c. sugar
- 2 c. zucchini
- 2 tsp. vanilla
- 3 c. flour
- 1 tsp. soda
- 1 tsp. cinnamon
- 1 tsp. salt
- 2 c. pecans
- 1 Tbsp. margarine
- 2 c. flour
- 2 c. milk (use nonfat dry milk plus 2 c. water if preferred)
- 1 tsp. salt
- 4 eggs or 1 egg and 6 whites
Directions

1Melt margarine 1 minute in microwave.

2Add flour, milk, salt and eggs.

3Whisk only until smooth to the consistency of cream. Pour into custard cups (2/3 full) and cook on lower rack (bottom heat is required).

4Do not preheat oven.

5Set oven for 450° for 20 minutes, then 350° for 20 to 25 minutes, or until golden brown. Turn oven off.

6Pierce with sharp knife.

7Let stand 5 minutes in oven to dry interior.
