  • 1 c. oil
  • 3 eggs
  • 2 c. sugar
  • 2 tsp. vanilla
  • 3 c. flour
  • 1 tsp. salt
  • 1/4 tsp. baking soda
  • 3 tsp. cinnamon
  • nuts and dates (optional)
  • 2 c. shredded zucchini

Directions

    Combine oil, eggs, sugar and vanilla; blend well.

    Add dry ingredients (no need to sift); blend well.

    Stir in shredded zucchini (dates and nuts).

    Bake at 325° in greased angel food, Bundt or 2 loaf pans.

    Bake for 1 hour and 20 minutes or until toothpick comes clean.
