  • 3 c. flour
  • 2 tsp. soda
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 3/4 c. walnuts, chopped finely
  • 3 eggs
  • 2 c. sugar
  • 3/4 c. vegetable oil
  • 2 tsp. vanilla
  • 1 (8 oz.) can crushed pineapple
  • 2 c. grated zucchini

Directions

    Combine dry ingredients; set aside.

    Beat eggs lightly in large bowl.

    Add sugar, oil and vanilla and beat until creamy.

    Drain pineapple and stir in along with zucchini.

    Add dry ingredients, stirring only until moistened.

    Spoon batter into 2 well-greased and floured 9 x 5 x 3-inch loaf pans.

    Bake at 350° for 1 hour. Cool 10 minutes before removing from pans.
