Ingredients

  • 3 eggs
  • 2 c. sugar
  • 1 c. oil (cooking)
  • 2 c. grated zucchini, peeled
  • 2 tsp. vanilla (if desired)
  • 3 c. sifted flour
  • 1 tsp. baking powder
  • 3 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 1 c. chopped nuts
  • 1/2 c. raisins

Directions

    Beat together eggs, sugar and oil.

    Add grated zucchini and vanilla.

    Sift flour, baking powder and soda.

    Add to egg mixture. Add salt to mixture.

    Fold in nuts or raisins, if desired.

    Pour into 9 x 5-inch loaf pans (makes 2 loaves) after pans are sprayed or greased and lightly floured.

    Bake at 325° for 50 minutes.

    This bread can be frozen after baking.
