  • 3 Eggs
  • 2 c. Sugar
  • 1 c. Vegetable Oil
  • 1 Tbsp. Vanilla
  • 2 c. grated zucchini
  • 2 c. Flour
  • 1 Tbsp. Cinnamon
  • 2 tsp. Baking Soda
  • 1 tsp. Salt
  • 1/4 tsp. Baking Powder
  • 1 c. Chopped Nuts (optional)

Directions

    In large bowl beat eggs until foamy.

    Beat in sugar and oil. Add vanilla.

    Beat until lemon color, add zucchini and stir.

    Add flour, cinnamon, baking soda, salt and baking powder.

    Stir well. Fold in nuts.

    Pour into 2 greased and floured loaf pans.

    Bake at 375 degrees for 1 hour.

    Take out and thump bottom of pans to test to see if done.

    Set for 10 minutes.

    Remove from pans to cool completely.
