- 3 Eggs
- 2 c. Sugar
- 1 c. Vegetable Oil
- 1 Tbsp. Vanilla
- 2 c. grated zucchini
- 2 c. Flour
- 1 Tbsp. Cinnamon
- 2 tsp. Baking Soda
- 1 tsp. Salt
- 1/4 tsp. Baking Powder
- 1 c. Chopped Nuts (optional)
Directions

1In large bowl beat eggs until foamy.

2Beat in sugar and oil. Add vanilla.

3Beat until lemon color, add zucchini and stir.

4Add flour, cinnamon, baking soda, salt and baking powder.

5Stir well. Fold in nuts.

6Pour into 2 greased and floured loaf pans.

7Bake at 375 degrees for 1 hour.

8Take out and thump bottom of pans to test to see if done.

9Set for 10 minutes.

10Remove from pans to cool completely.
