Ingredients
- 2 1/2 c. zucchini, shredded
- 3 eggs
- 1 c. salad oil
- 1 1/2 c. sugar
- 1 tsp. vanilla
- 1 Tbsp. cinnamon
- 3 c. flour
- 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 c. chopped nuts
- 1/2 c. raisins, soaked in hot water and drained or 1/2 c. chopped dates
Directions

1Shred the zucchini and mix with eggs, salad oil, sugar and vanilla. Blend well.

2Sift together all the dry ingredients. Add to zucchini mixture. Stir only until well moistened.

3Fold in nuts and raisins or dates.

4Pour batter into 2 greased loaf pans. Bake at 350° for 50 to 60 minutes.

5(Some use pumpkin pie spice instead of cinnamon.)
