Zucchini Bread

Ingredients

  • 2 1/2 c. zucchini, shredded
  • 3 eggs
  • 1 c. salad oil
  • 1 1/2 c. sugar
  • 1 tsp. vanilla
  • 1 Tbsp. cinnamon
  • 3 c. flour
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 c. chopped nuts
  • 1/2 c. raisins, soaked in hot water and drained or 1/2 c. chopped dates

Directions

    Shred the zucchini and mix with eggs, salad oil, sugar and vanilla. Blend well.

    Sift together all the dry ingredients. Add to zucchini mixture. Stir only until well moistened.

    Fold in nuts and raisins or dates.

    Pour batter into 2 greased loaf pans. Bake at 350° for 50 to 60 minutes.

    (Some use pumpkin pie spice instead of cinnamon.)
