- 2/3 cup shortening
- 2 1/3 cups sugar
- 4 eggs
- 2 cups shredded zucchini
- 2/3 cup water
- 3 1/2 cups flour
- 1 1/2 teaspoons salt
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves with 2 teaspoons vanilla
- 2/3 cup chopped nuts
- 2/3 cup raisins
Directions

1Heat oven to 350. Grease bottoms only of two loaf pans 9x5x3 inches, or 3 loaf pans, 8 1/2x4 1/2x 2 1/2 inches.

2Mix shortening and sugar in large bowl.

3Add eggs, zucchini and water.

4Blend in flour, baking soda, salt baking powder, cinnamon and cloves with vanilla.

5Stir in nuts and raisins.

6Pour into pans.

7Bake until wooden pick inserted in center comes out clean, about 60 to 70 minutes; cool slightly.

8Loosen sides of loaves from pans; remove from pans.

9Cool completely before slicing.
