- 1 lb zucchini
- 1 12 cups sugar
- 6 tablespoons butter, melted
- 2 eggs
- 14 cup plain yogurt
- 1 tablespoon lemon juice
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 12 teaspoon salt
Directions

1Grease a 9x5 inch loaf pan.

2Shred zucchini and squeeze liquid out of zucchini, by squeezing it in a towel or several paper towels.

3Squeeze well to release most of the liquid.

4Whisk together sugar, melted butter, eggs, yogurt, and lemon juice together in a large bowl.

5Stir in flour, baking soda, baking powder, cinnamon, and salt.

6Carefully stir in zucchini.

7Place in batter in loaf pan and bake at 375 degrees for 50-55 minutes.
