Ingredients

  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 3 tsp. vanilla
  • 1/2 c. chopped nuts
  • 2 c. coarsely chopped, unpeeled zucchini
  • 2 c. flour
  • 1/4 tsp. baking powder
  • 2 tsp. baking soda

Directions

    Beat eggs until fluffy.

    Add sugar and oil; beat well.

    Add nuts and zucchini and beat well.

    Sift dry ingredients and mix well.

    Pour into 2 greased and floured loaf pans or 12-cup Bundt pan.

    Bake for 1 hour at 350°.

    When cool, sprinkle with 10x sugar (powdered).

    Keep in fridge until eaten.
