- 3 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 2 c. grated zucchini
- 2 c. flour, sifted
- 2 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 1/4 tsp. baking powder
- 2 tsp. vanilla
- 1 c. chopped walnuts or pecans
Directions

1Beat eggs until foamy; add sugar and oil.

2Mix; stir in zucchini.

3Combine dry ingredients.

4Stir in until moistened.

5Add vanilla and nuts.

6Stir gently.

7Pour into greased and floured loaf pans.

8Bake at 325° for 1 hour or until done.

9Cool 10 minutes.

10Remove from pans.
