Ingredients
- 1 c. whole wheat flour
- 1 c. plain flour
- 1 1/2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/4 tsp. baking soda
- 1/4 tsp. salt
- 3 egg whites
- 1/2 c. oil
- 1 1/2 tsp. vanilla
- 2 c. zucchini, coarsely shredded and lightly packed
Directions

1Preheat oven to 350°.

2Grease 9 x 5 x 3-inch loaf pan.

3Mix dry ingredients except sugar.

4Beat egg white until frothy.

5Add sugar, oil and vanilla.

6Continue beating for 3 minutes.

7Stir in zucchini; mix lightly.

8Add dry ingredients.

9Mix just until dry ingredients are moistened.

10Pour into loaf pan.

11Bake 40 minutes or until toothpick inserted in center comes out clean.

12Cool on rack.

13Remove from pan after 10 minutes.

14To serve, cut into 18 slices about 1/2-inch thick.
