Ingredients

  • 3 eggs (room temperature)
  • 1 c. vegetable oil
  • 1 c. sugar
  • 2 c. zucchini, grated and well drained
  • 2 tsp. vanilla
  • 2 c. sifted flour
  • small can crushed pineapple, drained
  • 1/2 tsp. baking powder
  • 2 tsp. baking soda
  • 3 tsp. cinnamon
  • 1 tsp. salt
  • 1 c. raisins
  • 1 c. chopped walnuts

Directions

    Beat eggs slightly in large bowl.

    Stir in oil, sugar, zucchini, vanilla and pineapple.

    Sift flour, baking powder, baking soda, cinnamon and salt, then stir into egg mixture until well blended.

    Add raisins and walnuts.

    Spoon batter into 2 well greased 8 x 5 x 3-inch loaf pans.

    Bake at 375° for 1 hour.

    Cool in pans, about 10 minutes.
