Ingredients

  • 3 c. all-purpose flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 3 eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 2 tsp. vanilla
  • 2 c. shredded zucchini
  • 8 oz. crushed pineapple (optional)
  • 1 c. coconut (optional)
  • 3/4 c. nuts, chopped (optional)

Directions

    Combine first 4 ingredients; beat eggs in large bowl.

    Add sugar, oil and vanilla.

    Beat until creamy.

    Add dry ingredients; put in zucchini.

    Spoon into two floured loaf pans.

    Bake at 325° for 1 hour.

    May want to check after 45 minutes.

    Done when toothpick comes out clean.
