  • 3 eggs
  • 2 c. sugar
  • 3/4 c. oil
  • 1/4 c. milk
  • 2 tsp. vanilla
  • 3 c. flour
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 2 c. shredded zucchini, well packed (leave skin on)

Directions

    Combine the first 5 ingredients; beat until well blended.

    In a separate bowl, mix the next 5 ingredients.

    Add this to first mixture; beat well.

    Add zucchini; mix well.

    Pour into 2 loaf pans that have been greased and floured.

    Bake in preheated oven at 325° for glass and at 350° for metal, for 50 to 60 minutes, or until toothpick inserted in center comes out clean.
