Ingredients

  • 1 c. packed brown sugar
  • 1/2 c. white sugar
  • 1/2 c. butter
  • 1/2 c. oil
  • 3 eggs
  • 1/2 tsp. cinnamon
  • 2 tsp. baking soda
  • 2 c. mashed zucchini
  • 1 c. chocolate chips
  • 1 tsp. vanilla
  • 1/2 c. buttermilk
  • 2 1/2 c. flour
  • 1/2 tsp. salt
  • 4 Tbsp. cocoa

Directions

    Cream the first 4 ingredients together in a large mixing bowl. Add eggs, vanilla and buttermilk; mix well.

    Measure and sift all dry ingredients together into a bowl with wet ingredients.

    Grate zucchini and stir into mixture.

    Pour batter into greased and floured 13 x 9-inch pan or 10-inch tube pan.

    Sprinkle chips on top of batter.

    Bake in preheated oven at 325° for 45 to 50 minutes. Tube pan will take at least 1/2 hour more to bake.

    Test for doneness.

    Cool in pan for a few minutes before turning out on wire rack.
