  • 4 eggs
  • 1 c. oil
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 3 c. grated zucchini
  • 2 1/2 c. sugar
  • 2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 c. chopped nuts

Directions

    Beat together the eggs, sugar and oil.

    Sift together the dry ingredients and add to the batter.

    Fold in zucchini and nuts, mixing well.

    Pour into a greased and floured 9 x 13-inch pan. Bake at 350° for 45 to 60 minutes.
