  • 3 c. flour
  • 3 c. granulated sugar
  • 1 tsp. salt
  • 1 1/2 tsp. baking soda
  • 1 tsp. baking powder
  • 2 1/2 tsp. cinnamon
  • 1 tsp. vanilla flavoring
  • 4 eggs
  • 1 1/2 c. cooking oil
  • 3 c. zucchini squash, grated
  • 1 c. nuts

Directions

    Mix all ingredients together except nuts.

    Batter will be stiff; add nuts.

    Stir and pour into greased and floured 9 x 13 pan or three (9-inch) pans.

    Bake at 325° approximately 40 minutes according to pan size used.

    May be iced if desired.

    Can be frozen for later use.
