- 4 eggs
- 2 c. sugar
- 1 c. oil
- 2 c. flour
- 2 tsp. cinnamon
- 1 c. nuts
- 1 (8 1/2 oz.) can crushed pineapple, drained
- 2 tsp. vanilla
- 2 c. grated raw zucchini, press dry between paper towels
Directions

1Beat eggs and sugar until fluffy. Add oil and beat until well blended.

2In a separate bowl, sift flour and cinnamon.

3Add dry ingredients to egg mixture. Beat for 2 minutes.

4Stir in pineapple, zucchini, nuts and vanilla.

5Mix well and bake in tube pan at 325° for 1 hour. Cool 30 minutes.
