  • 4 eggs
  • 2 c. sugar
  • 1 c. oil
  • 2 c. flour
  • 2 tsp. cinnamon
  • 1 c. nuts
  • 1 (8 1/2 oz.) can crushed pineapple, drained
  • 2 tsp. vanilla
  • 2 c. grated raw zucchini, press dry between paper towels

Directions

    Beat eggs and sugar until fluffy. Add oil and beat until well blended.

    In a separate bowl, sift flour and cinnamon.

    Add dry ingredients to egg mixture. Beat for 2 minutes.

    Stir in pineapple, zucchini, nuts and vanilla.

    Mix well and bake in tube pan at 325° for 1 hour. Cool 30 minutes.
