Zucchini Casserole

  • 2 c. cooked rice
  • 3 small zucchini, sliced and cooked until crisp
  • 3 tomatoes, sliced
  • 6 oz. can green chili peppers (Ortega)
  • 1 lb. Jack cheese, shredded
  • 1 pt. sour cream
  • 1 tsp. garlic salt
  • 1 tsp. oregano
  • 2 green onions with tips, sliced
  • 1/4 c. diced green pepper

    Preheat oven to 350°.

    Layer in buttered casserole (9 x 12-inch) in order:

    rice, green chilies, 1/2 of cheese, zucchini, tomatoes and salt as desired.

    Mix sour cream, garlic salt, oregano, green onions and green pepper.

    Spread over tomatoes and top with rest of cheese.

    Bake 45 minutes at 350°.
