Zucchini Casserole

  • 3 to 4 c. zucchini, cut in small bite size pieces
  • 2 carrots, shredded
  • 1 onion, grated
  • 1 can cream of chicken soup, undiluted
  • 1/2 c. sour cream
  • 1 pkg. Pepperidge Farm seasoned bread cubes or crumbs
  • 1/2 c. melted butter

Directions

    Cook zucchini 5 minutes and drain.

    Mix butter with half of the bread crumbs, then mix with other ingredients.

    The other half of the bread crumbs go on top.

    Bake at 350° for 25 to 30 minutes. Cream of mushroom soup or cream of celery soup may be used.
