- 2 lb. sliced zucchini
- 1/4 c. sliced onions
- 1 can chicken or mushroom soup
- 1 c. sour cream
- 1 c. shredded carrots
- 1/2 c. melted oleo
- 1 (8 oz.) pkg. stuffing mix
Directions

1Cook zucchini, onions and carrots in salted water for 5 minutes.

2Drain.

3Save 1/2 cup of liquid.

4Combine soup, sour cream, oleo and liquid.

5Make stuffing; place in a 13 x 9-inch pan.

6Combine vegetables and soup mixture; then place on top of stuffing.

7Top with grated Cheddar cheese.

8Bake at 350° for 25 to 30 minutes.
