- 1 large zucchini, cut into 1/2 inch slices
- 1/2 c. onion, chopped
- 6 Tbsp. oleo
- 2 1/2 c. herbal stuffing
- 1 can cream of chicken soup
- 1/2 c. sour cream
Directions

1Boil zucchini 3 minutes and drain.

2Saute onion in 2 Tbsp. oleo.

3Stir in 1/2 c. stuffing, soup and sour cream.

4Turn into casserole dish and top with remaining stuffing and oleo.

5Bake at 350° for 30 to 40 minutes.

6May be prepared a day ahead, except for baking.

7Serves 4 to 6.
