- 6 c. cubed or chopped zucchini
- 1/4 c. chopped onion
- 1 can cream of chicken soup
- 1 c. sour cream
- 1 c. shredded carrots, uncooked
- 1 (8 oz.) box flavored stuffing mix
- 1/2 c. oleo
Directions

1Cook onions and zucchini; drain.

2Combine soup and sour cream. Stir in carrots; fold in zucchini and onions.

3Combine stuffing mix and oleo and spread 1/2 of stuffing mix on bottom of 12 x 7 1/2 x 2-inch Pyrex dish.

4Spoon remaining stuffing over vegetables.

5Bake at 350° for 25 to 30 minutes.
