  • 6 c. cubed or chopped zucchini
  • 1/4 c. chopped onion
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 c. shredded carrots, uncooked
  • 1 (8 oz.) box flavored stuffing mix
  • 1/2 c. oleo

Directions

    Cook onions and zucchini; drain.

    Combine soup and sour cream. Stir in carrots; fold in zucchini and onions.

    Combine stuffing mix and oleo and spread 1/2 of stuffing mix on bottom of 12 x 7 1/2 x 2-inch Pyrex dish.

    Spoon remaining stuffing over vegetables.

    Bake at 350° for 25 to 30 minutes.
