- 2 large carrots, shredded
- 1 large onion, chopped
- 3 small or 2 large zucchini
- 1 can mushroom soup or 2 c. homemade mushroom soup
- 1 c. soy mayonnaise or regular
- 3 c. seasoned bread crumbs (may use 2 1/2 c.)
Directions

1Saute onion and carrots in margarine or water until tender. Add mushroom soup and mayonnaise.

2Mix well.

3Wash zucchini and cut in cubes.

4Steam zucchini until tender.

5Drain and add to the sauteed mixture.

6Add the bread crumbs.

7Put in baking dish.

8Bake at 350° for 30 to 45 minutes.

9Makes 8 servings.
