- 2 lb. zucchini (4 c.)
- 3/4 onion
- 2 Tbsp. butter
- 3 eggs
- 1/2 c. milk
- 1/2 c. Parmesan cheese
- 2 Tbsp. dry bread crumbs
- 5 dashes cayenne pepper
- 1/2 c. grated Cheddar cheese
Directions

1In large skillet, saute zucchini and onion in butter until tender.

2Set aside.

3In large mixing bowl, beat eggs and milk. Add 1/3 cup cheese, bread crumbs and pepper to milk and eggs. Stir in zucchini and onion.

4Turn mixture into buttered 1 1/2-quart casserole dish.

5Sprinkle top with 1/2 cup grated cheese.

6Bake, uncovered, in preheated oven at 300° to 350° for 30 to 40 minutes.
