- 3 tablespoons butter
- 3/4 cup chopped onion
- 1-1/2 teaspoons dried basil
- 4 cups coarsely shredded zucchini
- 1 large garlic clove, minced
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded cheddar cheese
- 2 medium tomatoes, cut into 3/4-inch pieces
- 3 tablespoons sliced ripe olives
Directions

1In a large skillet, heat butter over medium heat. Add onion and basil; cook and stir until onion is tender, 4-5 minutes. Add zucchini and garlic; cook and stir over medium-high heat just until zucchini is tender, 2-3 minutes. Stir in salt and pepper.

2Top with cheese, tomatoes and olives. Cook, covered, on low until cheese is melted, about 1 minute.
