Zucchini Chocolate Pound Cake

  • 2 1/2 c. flour
  • 1/2 c. cocoa
  • 2 1/2 tsp. baking soda
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 3/4 c. butter
  • 1/2 c. milk
  • confectioners sugar (for sprinkling)
  • 2 c. sugar
  • 3 eggs
  • 2 tsp. vanilla
  • 2 tsp. grated orange peel (optional)
  • 2 c. coarsely grated zucchini
  • 1 c. nuts

Directions

    Mix flour, cocoa, baking soda, baking powder, salt and cinnamon in a large bowl.

    Set aside.

    Beat well in a medium bowl the butter, sugar and eggs.

    Add vanilla, orange peel and zucchini to egg mixture.

    Mix well.

    Add the egg mixture alternately with 1/2 cup milk to dry ingredients.

    Stir in chopped nuts, if you like.

    Bake in a greased and floured tube pan for 1 hour, or until cake tests done, in a 350° oven.

    Sprinkle with confectioners sugar.
