- 2 Tbsp. butter or margarine
- 2 c. sliced zucchini
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 1 (12 oz.) can whole kernel corn
- 1/2 tsp. basil
- 1/8 tsp. pepper
- 1/2 c. shredded Cheddar cheese
- 1 large tomato, cut into wedges
Directions

1In medium skillet, melt butter; add zucchini, onion and green pepper and cook until zucchini is tender, 8 to 10 minutes.

2Stir in corn, basil and pepper and heat thoroughly.

3Add cheese and heat until cheese is melted.

4Pour into serving dish and garnish with tomato wedges.

5Serves 4 to 5.
