Ingredients

  • 2 tbsp butter
  • 1 clove garlic, minced
  • 28 oz canned diced tomatoes
  • 1 /8 tsp. onion powder
  • 2 1/2 tsp sugar
  • 2 tsp seasoned salt
  • 1 tsp oregano
  • 1 bay leaf
  • 2 cup corn chex (or chex of your choice)
  • 2 zucchini, sliced
  • 1 can corn

Directions

    In large pot, melt butter.

    Add garlic & saute for 1 minute.

    Add tomatoes, seasonings, & chex, stir.

    Heat to boiling.

    Reduce heat.

    Cover.

    Simmer for 10 minutes, stirring frequently.

    Stir in zucchini & corn.

    Return to boil.

    Cover.

    Simmer for 20 minutes or until zucchini is tender.

    Stir occasionally.

    Remove bay leaf before serving.
