Zucchini Frittata

Ingredients
- 1/4 c. oil
- 1 c. thinly sliced white onion
- 3 c. chopped, unpeeled zucchini
- 1 tsp. minced fresh parsley
- 8 large eggs
- 1/2 c. grated Parmesan or Romano cheese
- 1/2 c. sharp Cheddar cheese, chopped
- dash of pepper
Directions

1Heat oil over low heat.

2Add zucchini, onion and parsley. Saute until soft about 5 minutes.

3Remove from heat; set aside. Beat eggs in a large bowl with grated cheese and seasonings.

4Add zucchini mixture and chopped Cheddar cheese; blend well.

5Pour into lightly greased 9-inch square pan.

6Bake at 350° until just firm in the center.

7Will take about 20 to 25 minutes.

8Serves 6. Best if eaten hot out of the oven.
