Ingredients

  • 3 c. all-purpose flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 Tbsp. ground cinnamon
  • 1 c. chopped pecans or walnuts
  • 2 large zucchini
  • 2 eggs, slightly beaten or Egg Beaters
  • 1 1/2 c. sugar
  • 3/4 c. honey
  • 1 c. vegetable oil
  • 1 tsp. vanilla extract

Directions

    Combine first 5 ingredients.

    Stir in nuts.

    Peel zucchini and shred enough for 2 cups.

    Combine zucchini and remaining ingredients. Add to flour mixture, stirring until dry ingredients are moistened.

    Spoon batter into 2 greased loaf pans. Bake at 350° for 1 hour and 5 minutes or until done by testing with a toothpick.

    Cool in pans for 10 minutes.

    Turn out of pans and cool.
