- 6 c. peeled and grated zucchini
- 6 c. sugar
- 2 Tbsp. lemon juice
- 1 (20 oz.) can crushed and drained pineapple
- 1/4 tsp. pineapple flavoring or omit
- 2 (3 oz.) pkg. apricot gelatin
Directions

1Cook zucchini and 1 cup water over medium heat; bring to boil. Reduce heat and cook an additional 6 minutes.

2Add lemon juice, pineapple and flavoring.

3Bring to a boil and cook 6 more minutes. Add dry gelatin; mix well.

4Pour into prepared jelly jars.
