Zucchini Lasagna

Ingredients

  • 1 lb. lean ground beef
  • 1/4 c. chopped onion
  • 1 (15 oz.) can tomato sauce
  • 1/2 tsp. salt
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • 1/4 tsp. ground pepper
  • 4 medium zucchini (1 1/4 lb.)
  • 1 c. creamed cottage cheese
  • 1 egg, beaten
  • 3 Tbsp. flour
  • 1 c. (4 oz.) shredded Mozzarella cheese

    In a large skillet, brown beef and onion over medium heat; drain fat.

    Add tomato sauce and seasonings.

    Bring to a boil; simmer 5 minutes.

    Slice zucchini crosswise into 1/4-inch slices. In a small bowl, combine cottage cheese and egg.

    In a greased 12 x 8 x 2-inch baking pan, place half of the zucchini and sprinkle with half of the flour.

    Top with cottage cheese mixture and half of the meat mixture.

    Repeat with zucchini and flour.

    Sprinkle with Mozzarella cheese and remaining meat.
