Ingredients
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 tsp. cinnamon
- 1/4 tsp. cloves
- 2 eggs
- 3/4 c. sugar
- 1/2 c. oil
- 2 tsp. vanilla
- 1 1/2 c. shredded yellow squash or zucchini
Directions

1Combine dry ingredients and set aside.

2In a large bowl, combine eggs, sugar, oil and vanilla.

3Beat well in mixer.

4Stir in squash.

5Add dry ingredients, stirring only until moistened. Optional nuts and/or raisins may be stirred in.

6Pour into greased and floured 9 x 5 x 3-inch loaf pan.

7Bake at 350° for 50 minutes or until done.

8Test with toothpick.

9Let remain in pan 10 minutes, then remove to cool.
