- 4 large eggs
- 50 g plain flour (1/3cup)
- 2 zucchini, grated (550g)
- 14 cup shredded mint leaf
- 40 g freshly grated parmesan cheese (1/2cup)
- 12 teaspoon garlic powder
Directions

1Preheat oven to 180C.

2Grease and line the base and side of a round (20cm) 7cm-deep cake pan with non stick baking paper.

3Put the eggs and flour in a bowl and whisk together until well combined.

4Add the remaining ingredients and season to taste with salt and pepper.

5Stir well to combine and pour into the prepared pan.

6Cook in the oven for approximately 45 minutes, until cooked through and golden.

7Cool in the pan.
