- 1 c. sugar, divided
- 2 tsp. cinnamon
- 2 eggs
- 1/2 c. vegetable oil
- 1 tsp. vanilla
- 1 c. grated zucchini
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2/3 c. chopped nuts
Directions

1Grease two 12-cup muffin pans.

2Sprinkle mixture of 2 teaspoons of sugar and cinnamon over greased surface.

3Shake to spread evenly, discarding excess.

4Beat together eggs, remaining sugar, oil, vanilla and zucchini.

5Stir in remaining ingredients and mix well.

6Pour into prepared pans.

7Cook for 20 to 25 minutes at 350°.

8Let stand 10 minutes before serving.

9Serve warm or cold.
