- 3 eggs
- 3/4 c. oil
- 3 Tbsp. molasses
- 1 1/2 c. grated zucchini
- 1 tsp. vanilla
- 2 c. flour
- 1 1/4 c. sugar
- 1 tsp. cinnamon
- 1 tsp. salt
- 1 1/4 tsp. baking soda
- 1 1/4 tsp. baking powder
- 3/4 c. raisins
- 3/4 c. chopped walnuts
Directions

1Whisk eggs with oil and molasses.

2Add zucchini and vanilla and mix.

3Combine flour, sugar, cinnamon, salt, baking soda and baking powder.

4Add to wet ingredients and mix until moistened. Don't overmix.

5Dredge raisins and walnuts in flour and add to batter; fold in.

6Pour into 2 greased 9 x 4 1/2-inch loaf pans. Bake at 350° for 50 to 55 minutes.
