Ingredients

  • 2 c. flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 3 1/2 tsp. cinnamon
  • 3 eggs
  • 1 c. vegetable oil
  • 1 1/2 c. sugar
  • 2 c. grated zucchini
  • 2 tsp. vanilla extract
  • 1 tsp. lemon extract
  • 1 c. raisins
  • 1 c. chopped nuts
  • 1/2 c. chopped dates

Directions

    Sift together dry ingredients, except sugar.

    Combine eggs, vegetable oil, sugar, zucchini and extracts in a separate bowl and beat well.

    Stir flour mixture into wet ingredients; mix until smooth.

    Add raisins, nuts and chopped dates last and stir.

    Pour into 9 x 5-inch loaf pans or muffin tins.

    Bake at 350° for about 45 minutes for loaves and 20 minutes for muffins.
