Ingredients
- 2 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1/4 tsp. baking powder
- 3 1/2 tsp. cinnamon
- 3 eggs
- 1 c. vegetable oil
- 1 1/2 c. sugar
- 2 c. grated zucchini
- 2 tsp. vanilla extract
- 1 tsp. lemon extract
- 1 c. raisins
- 1 c. chopped nuts
- 1/2 c. chopped dates
Directions

1Sift together dry ingredients, except sugar.

2Combine eggs, vegetable oil, sugar, zucchini and extracts in a separate bowl and beat well.

3Stir flour mixture into wet ingredients; mix until smooth.

4Add raisins, nuts and chopped dates last and stir.

5Pour into 9 x 5-inch loaf pans or muffin tins.

6Bake at 350° for about 45 minutes for loaves and 20 minutes for muffins.
