Ingredients

  • 3 c. all-purpose flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1 tsp. salt
  • 1/2 tsp. baking powder
  • 3/4 c. chopped nuts
  • 3 eggs
  • 2 c. sugar
  • 1 c. Crisco oil
  • 1 tsp. vanilla
  • 2 c. shredded zucchini
  • 1 (8 oz.) can drained crushed pineapple
  • 1 c. shredded coconut

Directions

    Combine flour, soda, cinnamon, salt, baking powder and nuts in bowl; set aside.

    Beat together until creamy the eggs, sugar, oil and vanilla.

    Stir in zucchini and pineapple.

    Add coconut if desired.

    Add and stir dry ingredients from first bowl until moist.

    Spoon into greased and floured mini pans.

    Bake at 350° (5 to 6 mini pans) for 45 minutes.
