- 3 medium zucchini (1 1/4 lb.), grated
- 1/3 c. Parmesan cheese, grated
- 1/4 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- pinch of black pepper
- 2 eggs, slightly beaten
- 1/2 c. chopped onions
- salad oil for griddle
Directions

1Place grated zucchini in a colander and squeeze out as much moisture as possible with hands or back of wooden spoon; set aside.

2In a large bowl combine dry ingredients.

3Add eggs, zucchini and onion; mix until combined.

4Preheat griddle; grease if necessary.

5Using 1/4 cup batter for each, pour onto griddle and flatten slightly to about 1/2-inch thickness.

6Cook 4 to 5 minutes until golden, turn and cook other side.
