- 2 c. coarsely grated zucchini
- 2 large eggs, beaten
- 1/4 c. minced onion
- 1/2 c. unbleached flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. oregano
- oil
- butter or margarine
- lemon wedges
Directions

1Place zucchini in strainer and press out as much moisture as possible.

2Mix with eggs and onion in small bowl.

3Combine dry ingredients and stir into zucchini-egg mixture.

4Heat oil on griddle or in skillet over medium heat.

5Drop dough by tablespoon and brown lightly on both sides.

6Serve immediately with butter and lemon wedges.
