  • 3 Tbsp. vegetable oil
  • 6 small zucchini, sliced
  • 1 Vidalia onion, sliced
  • 1 (14 1/2 oz.) can stewed tomatoes, drained
  • 2 Tbsp. Italian dressing
  • salt and pepper to taste
  • 1/2 c. Parmesan cheese, grated

Directions

    Heat oil in large skillet or wok.

    Add zucchini and onion. Saute until tender.

    Add other ingredients.

    Cover and simmer 10 minutes.

    Stir occasionally.

    Sprinkle with Parmesan before serving.
