- 3 Tbsp. vegetable oil
- 6 small zucchini, sliced
- 1 Vidalia onion, sliced
- 1 (14 1/2 oz.) can stewed tomatoes, drained
- 2 Tbsp. Italian dressing
- salt and pepper to taste
- 1/2 c. Parmesan cheese, grated
Directions

1Heat oil in large skillet or wok.

2Add zucchini and onion. Saute until tender.

3Add other ingredients.

4Cover and simmer 10 minutes.

5Stir occasionally.

6Sprinkle with Parmesan before serving.
