  • 8 c. zucchini, washed and sliced (do not peel)
  • 2 c. onions, sliced
  • 1/4 c. pickling salt
  • 2 to 2 1/2 c. granulated sugar
  • 1 c. vinegar
  • 2 green peppers, cut in small pieces (hot or sweet)
  • 1/2 tsp. celery seed
  • 1/2 tsp. mustard seed

    Add zucchini and onions to the boiling liquid.

    Bring to a boil again.

    Pack in pint jars and seal at once.
