Zucchini Pickles

Ingredients

  • 4 qt. sliced zucchini (1/4-inch slices)
  • 3 onions, sliced
  • 2 green peppers, sliced
  • 2 cloves garlic
  • 5 c. sugar
  • 1 1/2 tsp. turmeric
  • 1 1/2 tsp. celery seed
  • 2 Tbsp. mustard seed
  • 3 c. white vinegar

    Put first four ingredients in large pan.

    Salt heavy and put ice cubes over all and let stand at least 2 hours or until ice melts or put in refrigerator at night and stand overnight.

    Put up next day.

    Drain very well (don't rinse).

    Boil together remaining ingredients.

    Add zucchini, onion, green pepper and garlic. Boil 5 to 6 minutes.

    Place in jars and seal.

    Cauliflower may be added.
