Ingredients
- 4 qt. sliced zucchini (1/4-inch slices)
- 3 onions, sliced
- 2 green peppers, sliced
- 2 cloves garlic
- 5 c. sugar
- 1 1/2 tsp. turmeric
- 1 1/2 tsp. celery seed
- 2 Tbsp. mustard seed
- 3 c. white vinegar
Directions

1Put first four ingredients in large pan.

2Salt heavy and put ice cubes over all and let stand at least 2 hours or until ice melts or put in refrigerator at night and stand overnight.

3Put up next day.

4Drain very well (don't rinse).

5Boil together remaining ingredients.

6Add zucchini, onion, green pepper and garlic. Boil 5 to 6 minutes.

7Place in jars and seal.

8Cauliflower may be added.
