- zucchini
- 1 1/4 c. sugar
- 1 1/2 tsp. cinnamon
- 1 1/2 tsp. cream of tartar
- dash of nutmeg
- 3 Tbsp. flour
- 9-inch pie crust
Directions

1Use big zucchini, but still tender enough so you can pierce the skin easily with your thumbnail.

2Peel, cut into quarters lengthwise, remove the seeds and slice crosswise.

3Add zucchini to remaining ingredients after they are tossed together.

4Mix well. (It may be runny.)

5Dump into a 9-inch pie crust and bake 40 minutes at 400° or until golden brown.

6(You'll think you are eating apple pie, but it's more delicious.)
