  • 6 c. sliced, peeled zucchini
  • 1 1/2 tsp. cream of tartar
  • 1 tsp. nutmeg
  • 1 Tbsp. vinegar
  • 1 1/4 c. sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • double crust
  • 24 cream filled chocolate cookies, finely crushed (Hydrox)
  • 1/4 c. margarine, melted
  • 1/4 c. creme de menthe (green; live a little and add a little more)
  • 1 (1 pt.) jar Marshmallow Creme
  • 2 c. heavy cream, whipped

Directions

    Combine cookie crumbs and margarine.

    (Reserve 1/2 cup mixture for top.)

    Press into greased 9-inch spring-form pan.

    Add creme de menthe to marshmallow.

    Mix until blended at low speed.

    Fold in whipped cream.

    (I imagine you could use Pyrex pie plate for this, but works beautifully in spring-form pan.)
