  • 10 c. peeled, seeded and cubed zucchini
  • 2/3 c. lemon juice
  • 1 c. sugar
  • 1/4 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 2 unbaked pie crusts
  • 2 Tbsp. cubed butter

Directions

    Place zucchini and lemon juice into a saucepan, cooking until tender.

    Add sugar, nutmeg and cinnamon.

    Simmer 5 minutes longer. Cool.

    Pour into pie plate lined with crust.

    Dot with butter. Top with second crust.

    Bake 30 minutes in 350° oven or until golden.
