- 2 zucchini, cut up
- 2 Tbsp. olive oil
- 2 cloves garlic, chopped
- 1 c. long grain rice
- 2 Tbsp. butter
- 1 1/2 c. chicken soup stock
- 1/2 c. white wine
- salt to taste
- fresh-grated Parmesan or Romano cheese
Directions

1Saute zucchini in the oil and garlic.

2Remove from the pan. Add the rice and brown in butter.

3Place the rice in a saucepan. Add the soup stock and white wine.

4Bring to a boil without the lid.

5Add salt.

6Place the zucchini on the top of the rice.
-
7Do not stir.
-
8Cover and simmer until rice is tender, about 20 minutes.

9Add the cheese when serving.
