- 9 c. zucchini, chunked or grated
- 1 1/2 c. sugar
- 1 (46 oz.) can pineapple juice
Directions

1Peel zucchini and remove seeds from center.

2Cut into chunks and place in a large kettle.

3Add sugar and pineapple juice. Bring to a boil and simmer for 20 minutes.

4Pack into clean jars for canning.

5Place filled jars in a canner of boiling water and process for 20 minutes.

6Use in recipes calling for pineapple.
